Bone Broth

Traditional to most cultures around the world bone broths provide a nutrient dense and highly digestible way to heal the body.   Broths have been used for centuries to:

  •        Heal the  gut and strengthen digestion

  •        Help the body overcome allergies and food intolerances

  •        Improve joint health.

  •        Reduce Cellulite

  •        Boost the immune system

Ingredients

2 to 4 organic or grass fed Beef Marrow Bones
1 or two big meaty soup bones, or knuckle bones
Or
1 organic chicken carcass, with most of the bones cracked in half
1-2 onions, sliced into quarters (reduce inflamation, increase immune system, reg. blood sugar)
1 giant piece of ginger, sliced lengthwise
several cloves garlic (immune strengthening)
3 carrots chopped roughly
3 stalks celery (lowers bp)
2 tbs apple cider vinegar (anti-microbial, anti-bacterial, balances blood sugar, weight loss)
sea salt to taste

Optional additions:  For a more traditional broth add fresh rosemary, thyme, sage and bay leaf.  For more of a Vietnamese influence or for pho add: lemongrass, star anise, cardamom, coriander, cinnamon sticks, cloves, and fennel.  When ready to turn broth into a Pho soup, add sugar and fish sauce to taste.

Directions

Place onions, beef bones, garlic and ginger on cookie sheet and brush with coconut oil or bacon grease, sprinkle with salt and pepper.   Place cookie sheet on top rack of oven on broil, broil for 5 to 10 minutes or until browned on both sides (you’ll need to flip them midway through).

drop ingredients into large crock pot and add the remaining ingredients along with enough water to fill the pot.  Cover and let cook for 24 to 48 hours.  The longer the cook, the more nutrients you will obtain from the bones.  

Once cooked, strain out solids and allow broth to cool in a stainless steel pot or glass jars.  you can dig remaining marrow out of bones and spread on toast with salt.  My girls like to eat the leftover broth drenched carrots and meat and the dogs love the bones.  

Refrigerate the broth and skim off the fat that collects on top.  If made correctly, your broth will be very gelatinous.  Sip as a tonic in place of coffee every morning or use as a base for your favorite soup recipe.
